Panissa is an old traditional poor dish from my hometown Genoa.
It’s mainly done using only two ingredients: chickpea flour and water. It can be served in two different ways, always served as a side dish (as it is adding some onion or spring onion) or frying them like chips and dressed with salt, pepper and lemon wedges.

Ingredients
- 300 g. chickpea flour
- 1 l. of water
- salt q.b.

Procedures
In a bowl mix the flour with the water well the pouring into a pan and keep steering on gentle fire.
Its the same process how to make a polenta.

When the mix reaches the right consistency, pour it into a different tray and let it cool down really well.

Now I can start cutting into strips and create my two dishes.
The first one I cut into little cubes I add some onion salt and pepper.

The second dish I cut my panissa like a chips and I fried them and I served with salt, pepper, and lemon wedges.
