Chargrilled aubergine and cooked ham cake

Hi everyone this my lovely chargrilled aubergine cake, a light savoury cake different from the usual one and very easy to make it.

  • 2 Aubergine
  • 1 onion
  • 4 eggs
  • oregano q.b.
  • baby plum tomatoes
  • basil
  • extra virgin olive oil
  • salt and pepper
  • cooked ham

Procedures

I just start peeling my aubergines and slicing them them very thin.

It depends of the quality of your aubergine, but most of the times you need to put some salt on your slices and let it there few minutes until they don’t release their bitter liquid.

Rinse them under cold water and dry them.

Make your grill hot, put some salt on the aubergine slices, and then grill them.

In a pan drizzle a bit of extra virgin olive oil and add the diced onion. Cook them for few minutes and then add the chopped baby plum tomatoes. Keep it cooking for a few minutes.

When these two ingredients are ready I can start making my cake, starting with my aubergines, then topping with my tomatoes, ham, and oregano Parmesan cheese.

I keep going until I reach the top of my baking tray. Then I beat my four eggs up with my basil and I pour it on top of my cake. I leave it on the side a couple of minutes for let the eggs to run through the all cake and then I bake it for 20 minutes at 180 degrees.
