Hi everyone today I enjoy making this succulent and original pasta dish, especially made for beetroot lovers.
Ingredients
- 1 cook beetroot
- Seafood q.b.
- 100g Ricotta cheese
- Penne pasta
- 1 garlic cloves
- Dill
- Extra-virgin olive oil
- Balsamic vinegar
- White wine
- Salt and pepper
Procedures
It is a quite simple and straight forward pasta dish to make, and I was quite surprised too how nice and yummy it is, particularly because I’m not a great beetroot lover.
Put the salty water on the hob for the pasta.
In a different pan put the garlic with a bit of extra-virgin olive oil and seafood, cook them together for few minutes and then add some white wine. Cook it for further 10 min.
In a blender put the beetroot, the Ricotta, cheese, salt, and pepper, and gradually add some extra-virgin olive oil to obtain the right consistency and brightness.
At the end, add a little bit of balsamic vinegar that will contrast a bit the flavour of the beetroot.
When the pasta is ready, add the seafood in it, keeping a couple for decoration. Filter in it their water and add a couple of spoons of the beetroot pesto.
Mix them well together and dish it up….
