Hi everyone. Today I enjoy making this biscotti, better known like cantuccini.
The traditional cantuccini are made with almond, but you can change some of the ingredients and make your own original one.

Ingredients

- 225g of flour
- 120g of sugar
- 2 eggs
- 60g of butter
- 80g of pistachios
- 80g of dried cranberries
- 7g baking powder
- Vanilla essence
- Lime zest
Procedures
It’s a quite simple procedure. It won’t take much of your time to make these lovely biscotti.
In a bowl mix with the help of a spoon or your hands the soft butter with the sugar.

Then add the eggs into the mix.

Work the mix for a bit with a spoon, and add the rest of the ingredients.

Start to work the mix with a spoon, and then use your hands for creating a dough.
Add a bit of flour if the dough if it is still wet or sticky.

Cut the dough into three equal parts.

Work the three dough pieces and make them look like three salami. Then put them on the baking tray.

Bake them for 25/30 min at 180 degrees and then take them out of the oven. Let them rest for about 10 minutes.
Cut them into a biscotti size (or cantuccini) and bake them again for 10 minutes to biscuit them.

Take them out of the oven and let them cool down before eating. You will enjoy these lovely cantuccini.
