Hi everyone. Today I enjoy making this yummy baked cheese cake with lemon and blueberry.

 

Ingredients for the base

  • 350g of biscuits
  • 150g of butter
  • A pinch of cinnamon
  • 40g of honey

Ingredients for the cake

  • 250g of Ricotta cheese
  • 200g of double cream
  • 100g of Mascarpone cheese
  • 3 eggs
  • 100g of evaporated milk
  • 1 lemon skin
  • Icing sugar q.b.
  • Blueberries

Procedures

Let’s start this beautiful cake crushing all the biscuits and mixing them together with the rest of the ingredients for the base (melted butter).

Put around your baking tray some parchment paper and start to build the base of the cheesecake. Leave it resting in the fridge for an hour.

Now let’s start to prepare the cake mix.

Use two different bowls, one for working the double cream, and the other one for working the rest of the cake ingredients.

Then fold in gently the double cream into the other mix and pour the total into your base. Bake it for an 1 hour at 160 degrees.

When the cake is ready, let it cool down a bit and then put it into the fridge overnight, so  the cake has the right time to settle.

Display on top your cake the blueberries and sprinkle some icing sugar.
