Hi everyone. Today I enjoy making this lovely carrot cake.

Ingredients
- 250g of Mascarpone cheese
- 200g of grated carrots
- 200g flour
- 100g almond flour
- 2 eggs
- 150g of sugar
- 1 sachet if baking powder
- Icing sugar
- Half a glass of milk

Procedures
Put the egg yolks in a bowl with the sugar and, in a different bowl, the egg whites.

Mix the yolks with the sugar and then add the Mascarpone, work them well together.

Then add the milk and work the mix.

Now you can start adding gradually both of the flour.

When the mix is well amalgamated, add the grated carrots, the pistachios, the baking powder, and the egg whites previously worked.
Gently with a spoon agglomorate all the ingredients together.
Pour the mix into the baking tray previously buttered and floured, and place it into a pre-heated oven for about 40-45 minutes.

Once the cake is ready, let it cool down properly. Then turn it upside down, dress it with some icing sugar and enjoy it.
