Chicken meatloaf with mortadella, mixed cheese, and sweet Paprika

Hi everyone. Today I enjoy making something savoury I would like to share with all of you my chicken meatloaf.

Ingredients

  • 500g of minced chicken
  • 2 eggs
  • 50-60g of Parmesan cheese
  • 2 teaspoons of sweet paprika
  • 2 carrots
  • 1 onion
  • 120g Swiss cheese
  • 1 mozzarella
  • 6 slices of mortadella
  • Parsley
  • Salt and pepper q.b.

Procedures

Put in a bowl the minced chicken with salt and pepper.

Put my onion and carrots in a mixer and blend it very finely. Then add it to the chicken.

Add into the bowl the eggs, parsley, Parmesan cheese, and sweet paprika. Work the mix well with the hands.

Let the mix to rest in the fridge for 30 minutes before using it.

Then display the mix on top a piece of greaseproof paper.

Spread it all around making a rectangular piece.

On top of it, put the mortadella and cheese, and start rolling it from the smaller side of the paper.

Put it into the oven (always covered with the paper so it doesn’t become dry) for the first 30 min at 180 degrees, and then remove the paper and I brush it with a bit of oil. Cook and additional 10 min to give the meatloaf a bit of colour.

Wait few minutes before cutting and then enjoy it…
