Hi everyone this is my idea of a Christmas cake that I made for my work place.
I hope everyone will enjoy trying to make it.
Ingredients
- 850 g of mixed dried fruit of your choice
- 50/60 g of glazed cherries
- 100 ml of brandy
- 225 g plain flour
- A pinch of salt
- 1 teaspoon of nutmeg
- 1 teaspoon of grounded mixed spices
- 225 g of dark brown soft sugar
- 4 eggs
- 1 dessert spoon of golden syrup
- 225 g of butter
- 50-70 g of sliced almonds
- 2 orange zest
- 100 g of marzipan
- 150 g of icing sugar
- Brandy to feed the cake
- Icing sugar decoration
- Apricot jam
Procedures
I start soaking the dried fruits mix in the brandy the evening before making the cake. Nearly 15 hours.
The next morning I start cake. I mix together the dried ingredients: flour, sugar, salt, dried grounded spices, and almonds.
Then I add the orange zest to it.
Now I melt a bit the butter and in a separate bow. I beat the eggs and I add them to the dry ingredients with the golden syrup.
I mix well all the ingredients for about 5 to 10 minutes.
Then I add all the dried fruit soaked with brandy in it.
Mix all together and pour it into the baking tray, previously buttered and floured.
I bake it for nearly 4 hours, but I check it from time to time after the 3rd hour so I don’t take the risk of burning it.
I turn the cake upside down once it’s cold and I feed it with more brandy.
I brush the cake with apricot jam and I cover it with marzipan.
After that, I work the icing sugar and I put on top of my marzipan. Then I start decorating the cake.
It’s a cake that needs to be fed with more brandy from time to time until Christmas day. For that I use a cooking syringe, and I ensure it’s kept moist.
