Hi everyone. Today I enjoy making traditional sweets from my home town Genova, very popular in the Liguria region.
If I have to describe in few words, I would say that it’s frying milk. It’s actually a very yummy sweet, easy to make using only few ingredients,
Ingredients
- 200g of flour
- 100g of sugar
- 50g of butter
- 3 eggs
- 1/2 litre of milk
- Frying oil
Procedures
Start putting the milk, sugar, and butter in a pan and cook them until the milk boils.
When milk is boiling add gradually the flour and create an homogeneous mix. Then let it cool down.
Divide the yolks from the white, and work the white until is firm.
When the mix has cooled down a bit, add the egg yolks and assemble them to the mix.
Put now some frying oil in a pan a gently let it become hot.
Add now the egg white to the mix and incorporate them too.
When the oil is really hot, scoop in the oil the mix with the help of a teaspoon.
Wait until they reach the right colour and pinch them out. Carry on until you got the mix left.
When all the galletti are ready you can sprinkle on top of them either icing sugar or granulated sugar.
