Hi everyone! Christmas is coming soon, so today I enjoy making this Panettone pan brioche.

Ingredients
- 500 g of flour
- 80 g of butter
- 100 g of sugar
- 2 eggs
- Cashew nuts
- Dried cranberries
- Chocolate drops
- 28 g of yeast
- 150 ml of milk
Procedures
I start to warm the milk, and then I add to it the yeast and a some sugar from the total. I mix it well together and then I let it rest on the side for a couple of minutes.
In a bowl I put the flour, sugar, and the two eggs, and I mix all them together.
Now I pour it in the warm milk, and with the help of a spoon I incorporate the milk into the flour.
I put the mix on the Kitchen worktop and I start working it with my hands. When the dough is ready, I cover it with cling film and I let it rest for a couple of hours in a warm and dry place.
After two hours the dough should be double the initial size. I sprinkle a bit of flour on top, and move it on my worktop.
I spread the dough a bit and then I add the cranberries, cashew nuts, and the chocolate drops. I close the dough and I gently work it a bit with the hands to incorporate better all the ingredients.
Prepare the baking tray, if you haven’t got a panettone case like I do. For that, I fold some foil under my parchment paper in order to raise the high of my baking tray.
I put the dough in it and I let it rest in the oven for another hour, until it doubles the size.
Then I brush it with an egg and milk mix, cover with some cranberries, nuts and chocolate, and then I bake it for 30 min at 180 degrees.
