Rustic artisan bread with mix seeds

Hi everyone today I enjoy making this lovely bread with mix seed.

Baking is one of my biggest passion that I would love to explore more in time.

Ingredients

  • 380g of flour
  • 3g of dried yeast
  • 5g of salt
  • 250ml of water
  • 150g of mix seeds

Procedures

This kind of bread involve long resting time between 14 hr and 20 hrs.

In a bowl put the flour and the salt.

The water need to be ambient temperature then add the yeast and a pinch of sugar.

Add gradually the water to the flour and mix it up.

Generate a dough that will be a bit rough looking and cover it with cling film.

Put in a dry warm place for at least 14 hours.

I did the dough in the evening so it rest all over night.

After the 14 hours the dough will be three times the original size and very sticky.

Remove the cling film and gradually add the mix seeds.

Work the mix with a plastic spoon or spatula.

After assembling all the seeds, sprinkle some flour on the kitchen top and put the dough on it and sprinkle some more flour on top.

Work the dough with wet hands and folding the dough few times.

Create the form of the bread that you prefer sprinkle a bit more flour and cover it with a kitchen towel and let it rest for a couple more hours.

After an hour turn on the oven at 230 degrees and put a ceramic pan in it so it will be the right temperature when you will put the dough in it.

After the two hours take out the pan from the oven put the dough bread in it and cover it with  a lid.

Remember the lid doesnt have to be plastic, mine is glass lid.

Cook the bread for 30 minutes with the lid at 230 degrees, then remove the lids and cook the bread for further 15 minutes.

After the baking time remove the bread form the pan and cover it with a clean kitche towel and let it cool down before eating.
