Hi everyone today i enjoy making this lovely stuffed peperoni with quinoa, spinach pesto, pancetta, mushroom and baby plum tomatoes.
An original ideas to stuffed your peperoni….!!!

Ingredients
- 3 Peppers
- 125g of quinoa
- 100g pancetta
- 1/2 onion
- few mushroom
- few baby plum tomatoes
- spinach pesto
- 50g almonds slices
- grated mozzarella for topping
- salt qb
- pepper qb

Procedures
First of all diced half onion and put it in a pan with the diced pancetta.
Dont put any oil in the pan because the pancetta will release is own fat, after few minutes add the mushroom salt and pepper.
In a different pan boiled in salty water the quinoa.
When the quinoa is ready add it to the pancetta mix, also with the spinach pesto, the baby plum tomatoes and the almond.
Mix all the ingredients together and let it rest a bit.
Now cut the peperoni in half, remove all the seeds and precook them in the oven for about five minutes.
Then I stuffed the half peppers with my mix, topped up with grated mozzarella and baked gently for about 20/25 minutes at 160 degrees.
