Hi everyone. Today I enjoy making these lovely muffins made with carrots and white chocolate drops. They are not too sweet as a normal muffin can be.

Ingredients
- 300g of flour
- 100g of grounded almond flour
- 200g of peeled carrots
- 250g of sugar
- 100ml of double cream
- 80ml of vegetable oil
- 3 eggs
- Vanilla essence
- White chocolate drops
- 1/2 sachet of baking powder
- Icing sugar

Procedures
Mix in a bowl the flours with the baking powder.

In a different bowl put the eggs, sugar, and the vanilla essence, and work the mix for 5-10 minutes until creamy.

Blist the carrots very finely in a blender.

Add to the egg mix the flour gradually, and the oil and double cream in alternative way until you finish them.

Now add the carrots and with the help of a spoon agglomerate them well with the mix.

I used silicone cases for my muffins but the paper ones will do it too.
Pre-heat the oven at 180 degrees at static mode.
Fill the cases just about 3/4 of its volume and put them on the baking tray.

Place them into the oven and bake them for 20-25 minutes.
Once they are ready, let them cool down for 10-15 minutes before removing them from their cases and enjoy it…
With this quantity of ingredients I made 16 muffins… Ciao!!!
