Hi everyone. Today I enjoy making this lovely Autumn Focaccia with Pumpkin and oregano.
Ingredients
- 175g pumpkin
- 300g flour
- 14g yeast
- 150ml of water
- A pinch of sugar (for activate the yeast)
- Extra virgin olive oil
- Pumpkin seeds
- Oregano
- Marine salt
- A pinch of salt
Procedures
The first thing to do is to peel the pumpkin. Take from the total 175g, wrap it in foil and cook in the oven for 30 minutes until soft.
Keep the rest of the pumpkin for dressing the top of the focaccia before is going into the oven.
Once the pumpkin is cooked mush it up and add it to the flour with a pinch of salt and extra virgin olive oil.
In a bowl dilute the yeast with a pinch of sugar and warm water. Add this mix to the flour mix and, with the help of the spoon, start mixing everything together.
Now use your hands to work the dough and when is ready cover it, letting it rest for 3 hours.
After 3 hours take your dough, drizzle a bit of flour on top of it, and remove it from the bowl.
Drizzle a bit of oil on top of the baking tray. Display your dough on top of it and spread it around.
Let it rest other 30 minutes. Then with your fingers press your dough and create some holes without breaking the dough.
Dress it with some pumpkin, pumpkin seeds, oregano, extra virgin olive oil, and marine salt.
Bake it at 200 degrees for 15-20 min.
