Hi everyone! Today I enjoy making this lovely Caprese cake with white chocolate, almonds, and lime.
It’s a gluten free cake… It’s definitely worth a try!

Ingredients
- 200g grounded almonds
- 120g sugar
- 60g sugar
- 100g extra virgin olive oil
- 180g white chocolate
- 5 eggs
- 1 lime
- 5g vanilla powder
- 50g corn flour
- 7g baking powder
- Icing sugar

Procedures
To start with, I grated the white chocolate bar.

When is all done, I did put it in a bowl with the grounded almonds, 120g of sugar, corn flour, lime zest, baking powder, and the vanilla powder.

I drizzled on top extra virgin olive oil, and I mixed well all the ingredients together.

In a different bowl, I did put the five eggs and the 60g of sugar. Then I worked the mix for five minutes.

Then I gradually add the eggs with sugar to the other mix, and I gently worked them well together until I finished the mix.
I prepared a baking tray, and then I poured the mix in it.

I pre-heated the oven at 200 degrees, and then I placed the cake in it.
I cooked my Caprese cake for the first five minutes at 200 degrees, and then I dropped the temperature down to 160 degrees for another 40 minutes without opening the door of the oven.
When the cake is ready, let it cool down for 10 minutes and then turn it upside down.
Sprinkle some icing sugar on it and enjoy it!!!
