Hi everyone. Today I enjoy making this lovely pasta dish with fennel pesto and toasted hazelnuts.

Ingredients

  • 1 fennel
  • 2 garlic cloves
  • Extra virgin olive oil
  • Salt
  • Lemon juice
  • Hazelnuts

Procedures

This pasta dish it’s quite simple to make, but it has got an unique flavour.

To start with, wash and slice the fennel really finely. Then cook it for 5 minutes in a pan with the garlic cloves, extra virgin olive oil, and salt.

Toast the hazelnuts with a bit of salt in a different pan.

When the fennel is cooked, mix it up with the lemon juice and a bit of water. Blend everything together and you will get a creamy pesto.

Crush the hazelnuts and keep a few whole for the final decoration.

When the pasta is ready, mix all the ingredients well together in a pan and dish it up.

Decorate the dish with a bit of dill and the whole hazelnuts you kept on the side.
