
Hi everyone. This is my lovely pan brioche with Mascarpone and blueberries.
This pan brioche received an outstanding come back from loads of people on my Facebook page, and from other social networks groups when I published it.
Since that happened, I decided to generate a blog that can make my simple recipes more professional and formal.
It is relatively easy to make but requires a long resting time.
Ingredients
- 350g of flour
- 2 eggs
- 50g of butter
- 100g of sugar
- 120ml of milk
- 7g of yeast
- 250g of mascarpone
- 250g blueberries
- 50g of icing sugar
Procedures
The first step is to warm up the milk and add a pinch of sugar from the total. Add also the 7g of yeast.

Dilute the yeast well with the milk and leave it on the side.
In a bowl put the flour, eggs, melted butter, and sugar. Add gradually the milk with yeast to the ingredients in a bowl and create a dough.

Cover the dough and let it rest for a couple of hours.

Now we can start working on the filling for the pan brioche.
Mix the Mascarpone with the icing sugar and add it to it to the blueberries. Put the mix in the fridge afterwards.
After a couple of hours, take the dough out and spread it with your hands on the working surface that should have been previously sprinkled with some flour.
Spread on top of the dough the Mascarpone mix with the back of a spoon.

Roll up the dough with mix.

Brush the Brioche with a bit of milk and then bake it for 25-30 minutes at 160 degrees. It will depend on oven, so just keep on eye during the baking.
