Pink grapefruit cake

Hi everyone. This is my lovely grapefruit cake, with a really nice zesty flavour that doesn’t make your cake too sweet.

Ingredients

  • 300g of flour
  • 50g potato starch
  • 3 eggs
  • 150g of sugar
  • 150g vegetable oil
  • Icing sugar q.b.
  • 2 Grapefruits
  • 1 sachet of baking powder

Procedures

Let’s start this lovely cake mixing together the eggs with the sugar for about 10 minutes. Then add the oil to it.

After ten minutes add gradually the flour, starch, and the baking powder.

Now the mix it might be a bit stiff and hard, but we still need to add the zest and the juice of the grapefruit.

Add gradually the juice until you reach the right consistency .

Pour the mix into the baking tray and bake it on pre-heated oven at 170 degrees for the first 35 minutes and at 120 degrees for other 25 minutes.

When the cake is ready, remove it from the baking tray and sprinkle on top of it a bit of icing sugar.
