Hi everyone today I enjoy making this lovely dish , just using few ingredients but the results its pretty amazing.

INGREDIENTS
- Salmon fillets
- hazelnut grains q.b.
- bread crumbs
- parsley q.b.
- fresh chilli
- 1/4 onion and a small carrots
- 200g of peas
- extra vergin olive oil
- salt
- 2 lagustine

PROCEDURES
In a pan diced very fine the onion and carrot , cook them few minutes with a bit of extra vergin olive oil and then add the peas.

In a tiny bowl prepare the chilli and parsley oil.

Brush the top of the salmon fillet with a bit oil and en croute them with hazelnut grains and bread crumbs mix previously done (when you mix the hazelnut and the bread crumbs add a bit of extra vergin olive oil and sal for give flavour and moist).
Bake the en croute salmon on pre heated oven for 10/15 minutes.
When the salmon is it in the oven prepare the vellutata.
When the peas are cook, blist them in a blender with some extra vergin olive oil and salt until cream and bright.
Cook the two lagustine in a pan with a bit of oil, they will be ready in few minutes, then start to dish it up the meal.
Start with the vellutata then display on top the salmon and lagustine, dressed the dish with the chilli and parsley oil and few hazelnut grains.
