Hi everyone! This is recipe for red velvet cake with passion fruit balsamic vinegar and mixed berries.
It took me a day of work but I’m sure its worth the effort.

Ingredients
- 300 g of flour
- 300 g of sugar
- 3 eggs
- 100 g of butter
- 125 ml of milk
- 1 small tub of Greek yogurt
- 1 small tub of food colourant red gel
- 15 g of cocoa powder
- Half sachet of baking powder
- 1 table spoon of passion fruit balsamic vinegar
- 1 bag of frozen berries
- Desiccated coconut
- 180 g of Philadelphia cheese
- 100 g of butter
- 200 g of icing sugar

Procedures
To begin, mix the cocoa powder with the red colourant gel and create a paste. Leave it on the side.

In another bowl mix the yogurt with the milk.
In the main bowl, mix the sugar and melted butter for few minutes. Then add one egg at time.
Add to the cake mix the red colourant paste and the yogurt with milk. Mix everything together until it’s all homogeneous.
Now, add the flour with the baking powder and the passion fruit balsamic vinegar, and assemble it all well together.

Bake the cake for 50 minutes at 180 degrees.

PNow start to preparing the icing sugar using the icing sugar, the butter, and the Philadelphia cheese. Put it in the fridge once is ready.

In a separate bowl put the frozen berries with some sugar.

When the cake is ready, let it cool down. Then cut in half and remove the top of the cake that will be used for decorating the red velvet.
Now fill the sponge with the icing sugar, and close together the two halves. Spread the remaining icing all around the cake.
Crumble the top of the cake that was previously removed and gently display all around the Red Velvet, leaving the centre of it empty for the berries.

Display the berries in the middle of the Red Velvet and sprinkle some coconut around to give a bit of contrast.
