Hi everyone. Today I enjoy making an original and succulent risotto using only two ingredients: cantaloupe melon and Gorgonzola dolce.
Ingredients
- 2 handfuls of rice
- 3 slices of cantaloupe melon
- 1 small onion
- Vegetable stock
- Salt
- Gorgonzola dolce
- Extra virgin olive oil
Procedures
Start preparing the vegetable stock.
Slice the onion very finely and cook it for a couple of minutes with a bit of extra virgin olive oil.
Now I add the rice and toaste it a bit together with the onion.
Add a bit of water to it. White wine would be ideal but I didn’t have it, and that’s why I used a bit of water instead.
When the water is completely evaporated from the rice, add to it one and half slices of melon (in slices, not dices) and some vegetable stock.
Keep adding the stock when you see that is starting to dry up.
Half way through the cooking process, add the other one and half melon, sliced.
When the risotto is cooked, add the Gorgonzola dolce and the butter.
Mix all well together and let it rest for few minutes in the pan before dishing it up.
