Hi everyone today I enjoy making this lovely olives focaccia.
A real gourmet focaccia soft and tender with the additional of marinated mediterranean pitted olives and oregano.

Ingredients
- 500g of plain flour
- 400ml of ambient water
- 1 teaspoon of salt
- 1/2 teaspoon of sugar
- 7g of yeast
- 250/300g of mix marinated pitted olives
- oregano
- sea salt
- extra vergin olive oil

Procedures
Dilute the yeast in the ambient water with the half teaspoon of sugar.

Add the teaspoon of salt into the flour and gradually add the water with the yeast to it

Work the mix with a spoon to begin with and after with your hands. generate a dough that should be wet and sticky, so dont worry if is not dry.

Cover the dough with a kitchen towel and let it rest in a warm dry place for a couple of hours.
After the two hours the dough will be triple in size.

Sprinkle some flour on the kitchen top and drop the dough on top of it and sprinkle a bit more flour on top of the dough

The dough will be soft and fluffy easy to spread with your hands.
In a baking tray put some vegetable oil all around the surface.
With the help of a pin roll put the dough into the baking tray and keep spread it with your hands equally.

When you finish spread the dough, let it rest for another hour in a warm dry place.
Now switch the oven at 200 degrees.
After the hour take the baking tray with the dough , you will notice that it raise again a bit.

Pouring on top of it mixture of extra vergin olive oil and water, enough to cover the surface of the dough.
With yout fingers press the dough randomly all around the surface and create holes.
Put now on top of the dough the mix pitted marinated olives the oregano and the sea salt.

Put the tray into the hot oven and cook it for 15 minutes at 200 degrees on static mode and further 5 minutes in grill mode.
When the focaccia is ready take it out from the oven and let it cool down a bit, cut it and enjoy it….
